Living with an American family, he struggled to find the comforting dishes of his upbringing in a land where Filipino food was scarce. However, Vince's resourceful mother came to the rescue...
In the vibrant streets of Manila, where every meal felt like a celebration, Vince grew up surrounded by the rich aromas and flavors of Filipino cuisine. But when circumstances led him to San Diego, California, for high school, he found himself in a culinary desert, far from the familiar tastes of home. Living with an American family, he struggled to find the comforting dishes of his upbringing in a land where Filipino food was scarce.
However, Vince's resourceful mother came to the rescue, sending him a popular Filipino food cookbook. Armed with this treasure trove of recipes, Vince embarked on a self-taught culinary journey in the late 1970s, determined to recreate the flavors of home in his American surroundings. In his tiny kitchen, he experimented tirelessly, mastering the art of adobo, sinigang, and pancit, infusing each dish with the warmth and nostalgia of his childhood.
But Vince's culinary adventures didn't stop there. In the late 1980s, he found himself in Arlington, Texas, where he discovered a new passion: the art of smoking meat Texas-style. Frequenting BBQ cooking competitions, he befriended seasoned pitmasters, eager to learn their secrets. As he watched over the fire and spritzed the meat, he absorbed their techniques like a sponge.
Before long, Vince was smoking his own versions of beef brisket and pork ribs, blending the bold flavors of Texas BBQ with the soulful spices of his Filipino heritage. With each mouthwatering bite, he bridged the gap between two seemingly disparate culinary worlds, creating dishes that were uniquely his own.
Inspired by the centuries-old influence of Spanish colonization on Filipino cuisine, Vince naturally gravitated towards cooking Spanish food, especially with his Spanish-speaking Filipino wife and in-laws. Intrigued by the alchemy of flavors and textures, he delved into the intricacies of Spanish cooking, experimenting with paellas, tapas, and hearty stews.
Driven by his insatiable curiosity and passion for innovation, Vince continually researched and experimented, always striving to elevate his dishes to new heights. For him, the kitchen was a sanctuary—a place where he could escape the stresses of running his family's business in garments manufacturing and coaching swimming and triathlon.
In the midst of life's chaos, Vince found solace in the sizzle of a hot pan and the intoxicating aroma of spices mingling in the air. Cooking became his therapy, his Zen moment—a chance to slow down, reconnect with his roots, and nourish both body and soul.
And so, fueled by his love for food and the joy of sharing it with others, Vince decided to open La Socarrat Paella Grill and Resto Bar—a haven where he could showcase his culinary expertise to the public. With each dish served, he hoped to transport his guests on a gastronomic journey, celebrating the diverse flavors and cultural heritage that shaped his culinary identity.
